Black eyed pea’s salad that appeals to the ‘desi taste buds’ as well
This is a nutritious and yummy salad. The image that I
clicked doesn’t do justice to what the salad looks like. It doesn’t look all
that ugly in reality. But you must trust me, it tastes lovely. Please don’t go
by the image and do try it.
Ingredients:
1 cup soaked overnight and boiled black eyed peas (Chauli)
1 Large potato dices and shallow fried
3 tblspns fried onions (birista)
1 tblspn olive oil
1 tblspn mayonnaise
2 cloves of garlic grated
1 pinch garam masala
1 pinch cumin powder
1 pinch coriander powder
1 tblspn chopped coriander
1 jalapeno chopped
4-5 chopped olives
½ cup crispy roti strips for garnish
Take the olive oil in a bowl and add the garam masala,
coriander, cumin powder, grated garlic, chopped coriander and mayonnaise. Mix the
ingredients well to make the dressing. Now add fired dices potatoes. The
potatoes should be well done and brown on both sides. I love the flavor of
potato that is aloud to brown a little. It adds a lovely texture and flavor to
the salad. Now add the boiled peas, fried onions, jalapeños and olives and mix well so that
the dressing coats all the other ingredients. Let the salad sit in the
refrigerator for a bit.
Meanwhile cut up strips of leftover roti and stir fry it in
1 tblspn of oil on a hot tawa. The roti will become crispy in about 3-4
minutes. You do not need to use much oil. Sprinkle the roti strips on the cold
salad and serve. The beauty of this salad is that you can eat it warm and cold.
