Dry Fruit, Cherry, Banana Pie
I tried this
nutritious dry fruit, cherry and banana pie and it turned out to be totally
yummylicious. I served it hot with vanilla ice-cream and within minutes the dish
was squeaky clean.
Ingredients:
For the
base
1/4 cup
walnuts
1/4 cup
pistachios
1/4 cup
almonds
1/4 cup
cashews
3 good day biscuits
or any butter cookie of your choice
1 pinch nutmeg
powder
1 pinch cinnamon
powder
1 pinch cardamom
powder
1 tblspn
butter
For the
filling
1/2 tin pitted
cherries
1 sliced
banana
4 tblspns
sugar
1/2 cup fresh
cream
1 1/2 tspn vanilla
essence
puff pastry

Grind all the base
ingredients into a coarse powder. it will be a little moist because of the
butter and the oils from the nuts. Line a buttered baking tin with the mixture
and press it down with a spoon to make it firm and tight.
lay the cherries
such that the entire tray is covered with a single line of cherries. Sprinkle
1/4 the sugar. Lay the sliced bananas over the cherries and sugar. (the sugar
helps draw moisture from the fruits and makes the pie a little moist and
juicy)
Mix the cream,
remaining sugar and vanilla essence and pour it on the bananas.
Roll the puff pastry
such that it is 3mm thick and cover the tin. brush some butter on the pastry and
put it in Pre heated the oven at 180 degrees for 25-30 minutes. The pastry will
puff up a little (not much) because we rolled it a little
thin.
Cut into pieces and
serve with Vanilla ice-cream.
