Mango Fool:Yes! It is called Mango Fool! I am not making it up.

Mango Fool is a summer dessert. The recipe is very simple but there are many versions of it floating around. And here is mine.
Ingredients:
1 pack Britannia Pineapple Cake
1 cup hung curd (hung masti dahi)
1 cup dices mangoes
2 cup mango pulp
1 small carton of Real Pineapple Juice
1tspn vanilla essence




Start buy crumbling the cake with your hands and layer it in a clear bowl.


Press it down with your fingers to make the surface even.


pour 2/3rd of the carton of pineapple juice all over the cake layer and let it sit in the refrigerator for 10 minutes. Spoon a layer of mango pulp on the cake.

Whisk the hung curd, 1 cup of the mango pulp and vanilla essence. Layer the curd mix on the pulp layer. My curd mix has some curd lumps as I didn't have the time to whisk it. But make sure to whisk the mix until it is smooth and creamy.

Finally layer the dices mangoes and serve cold.

You can make this dessert in glasses to serve as individual portions or make it in a bowl like I did.

I get done with office and rush home on most days to make iftaar and hence made it in a bowl as I wouldn't have enough time to layer this a number of times for individual portions.
