Mung, chickpea and corn sweet and savory salad



Like most people I always believed that salads are the least delicious part of any meal. But this one for sure isn’t. This protein packed, high on fiber salad is lip smacking tasty, nutritious and filling. Do try it out and let me know what you think.

Ingredients:

1 cup soaked and par boiled mung beans
1 cup soaked and boiled chickpeas
1 cup boiled corn kernel
2 tblspns chopped onions
1 tblspn chopped green chilies
2 tblspns chopped tomatoes
2 tblspns chopped coriander leaves
2 tblspns chopped green olives
2 tblspns chopped dates
2 tblspns roasted sunflower seeds
½ cup pomegranate seeds
½ cup cut grapes
½ cup chopped lettuce
1 tspn chaat masala
Juice of 1 lime
Salt to taste



Toss all the ingredients in a glass or ceramic bowl. Chill and serve. Serves 6 ppl.
